Crêpes

For this evening dessert I choosed at make a little more healthy version of famous French pancakes “Crêpes”. Perfect for breakfast, lunch or a light snack anytime. So all you need are some ingredients and a blender!

Ingredients (approx. 10 – 12 crêpes):

  • 90 g oats
  • 300 ml almond milk
  • 1tbsp honey
  • 2 tbsp coconut oil (melted and slightly warmed) + 1tbsp for cooking
  • 2 eggs
  • 1tbsp vanilla extract

Directions:

First add oats and pulse for 5 – 10 seconds until they are finely milled. Than add all other ingredients and pulse for another 10 – 15 seconds or until mixture is smooth. For best results refrigerate mix for 1 hour.  Once you’re ready to cook, melt a little bit coconut oil in an pan over medium heat. To make one perfect crêpe I used 60 ml of mixture (for best results use measurement cup). Cook for 40 – 60 seconds every side. Add extra coconut oil when needed, so crêpes do not stick.

Serve immediately with your favorite ingredients 🙂 Enjoy it!
