Veggies in the pot


You know how obsessed I’m with colorful food 🥘 I just can’t get enough of rainbow 🌈 on my plate. Today I bought already assorted vegetables (beets,carrots,sweet potatoes, etc.) and came to conclusion – I need to make veggies in the crockpot.


  • Assorted vegetables (I had colorful carrots and beets, sweet potatoes, parsnip and a rosmarin stock)
  • Olive oil ~ 4 tbsp.
  • Salt, pepper after taste

Warm up oven until 200*C. Cut all vegetables into medium/large pieces (depending from your preferences) and add to a crockpot. Mix with olive oil, salt and pepper and add rosmarin on top. Cook for ~ 60 minutes ( stir once in a while).

I served with roasted pork tenderloin (recipe here…My husband is starving…) and fresh rucola salad with balsamic vinaigrette.
