You have deserved a cupcake, my dear ❣️

Patience pays off friends! And here’s the recipe of delicious, creamy and most important HEALTHY cupcakes. Aren’t they perfect?

Ingredients for batter (enough for 8 cupcakes):

  • 80 g almond flour
  • 70 g whole-wheat flour
  • 2 medium eggs
  • 2 tsp. coconut oil
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 2 tbsp.  raw honey
  • 50 ml  rice milk
  • 2 tsp. coconut sugar

Cacao/coconut filling :

  • 50 g coconut oil
  • 15 g cacao powder
  • 2 tsp. honey

Cream filling:

  • 2 tbsp. skyr/greek yoghurt
  • 2 tsp. caramel syrup

 

Preheat oven to 175* C. Add all batter ingredients and mix until smooth consistency. Fill cups half full of batter. Bake 12-15 minutes. Meanwhile make both fillings. When cupcakes are ready, transfer to cooling rack to cool completely, about 20 minutes. Cut out center of each cupcake. Fill centers with cacao/coconut filling first and cream filling on top.

And here you have a delicious dessert for any occasion.
