🦐Shrimp salad with red rice

Fresh and tasty salad with shrimps soaked in fresh squeezed orange juice 🍊


  • 100 g red rice
  • 150 g shrimp
  • 4 hard boiled eggs
  • 2 tbsp. spring onions
  • 80 g cucumber
  • 2 tbs. vegenaise
  • Salt, pepper (after taste)
  • Fresh squeezed orange juice

First cook rice and eggs, and let them cool down. Meanwhile squeez out orange juice and soak shrimp for 15 min. Cut cucumbers, chop spring onions and put everything in a bowl. Add cooled down rice, chopped eggs, shrimp (dry in a kitchen towel), vegenaise and mix all ingredients together. Salt and pepper to taste.

Serve with some fresh baked ciabatta or crispy seed flatbread (as I did 😊).
