Easy 30 min. meal for busy days

Easy and quick lunch/dinner idea for busy people.

I know how hard it can be to make something quick, delicious and healthy at the same time. Especially, if you’re working long hours and don’t want to spend hours in the kitchen. So here is a perfect recipe for busy days.

Pork stir-fry with Rice noodles


Ingredients:

  • 220 g rice noodles
  • 350 g pork tenderloin
  • 3 chard leaves, chopped
  • 1 small garlic, chopped
  • 1 medium onion, chopped
  • 400 g canned cherry tomatoes
  • 1 tsp soya sauce
  • 2 tbsp olive oil
  • Salt, pepper

Instructions:

  1. In a large wok , heat 2 tbsp of olive oil over high heat.
  2.  Chop chard leaves, garlic and onion.
  3. Add to wok and stir around. 
  4. Cut pork tenderloin into small pieces and add to wok.
  5. Cook for 5 – 10 min. and add canned cherry tomatoes, and continue stirring once in a while 
  6. Meanwhile cook rice noodles (it takes only  3 minutes!)
  7. Add to wok and add soya sauce
  8. Stir -fry for 5 minutes or until pork is cooked through.

I served with red cabbage and carrot Slaw. But you can choose any other green salads after your preferences.

Ingredients for Red cabbage and carrot Slaw:

  • 1 red cabbage, small
  • 2 carrots, medium
  • 1 bell pepper, red
  • 1 tbsp olive oil
  • Fresh squeezed juice from 1 lime
  • Salt, pepper

Instructions:

  1. Grate all vegetables ( on a rough grater)
  2. Add to a salad bowl.
  3. Mix with olive oil, lime juice and salt/pepper.
