It’s Monday and I think we all have deserved a large piece of a delicious pie! Just to make a rest of the week much, much better. And this is exactly what I have prepared for you today. A creamy, chocolate pie with crunchy nut crust. OMG! It’s just out of this world, you guys.

  • 100 g almonds
  • 80 g walnuts
  • 200 g whole grain cookies
  • 1 tbsp sugar
  • 100 g unsalted butter, melted
  • 1 1/2 tsp vanilla extract
  • 170 g white chocolate
  • 170 g dark chocolate
  • 200 g cream cheese
  • 250 ml cuisine soya whipping cream
  • Salt
  • Walnuts and strawberries for topping (optional)

  1. Preheat oven to 160C
  2. Lightly grease 22-24 cm pie plate
  3. Add almonds, walnuts and whole grain cookies to a food processor and pulse until the nuts and cookies have been ground to small crumbs. Add to a separate bowl
  4. Add melted butter, sugar and vanilla extract and a pinch of salt to the bowl and stir until all ingredients are smoothly combined
  5. Bake for 15 minutes or until the pie is starting to lightly brown
  6. Take out of the oven and cool down
  7. Meanwhile, prepare the filling. Add both chocolates and cream cheese to a large microwave safe bowl and heat in a short intervals (approx. 15 seconds each), stirring in between, until chocolate is melted
  8. While the mixture is cooling, beat the soya whipping cream, 1/2 tsp vanilla extract until stiff consistency
  9. Fold the whipped cream into the chocolate/cream mixture until it is smooth
  10. Add filling to the cooled pie crust and top with strawberry pieces and crushed walnuts (this is optional)
  11. Put in the fridge for at least 3-4 hours

Enjoy your delicious Pie!
