Oven cooked pork chops with veggies 

Another easy meal for busy days. It combines different delicious root vegetables, pork chops and I added whole-wheat pasta for extra fiber.


Ingredients:

  • 4 pieces pork chops (approx 500 g)
  • 2 red beets, medium
  • 3 carrots, medium
  • 1 parsnip, large
  • 1 Jerusalem artichoke, medium
  • 1/2 tsp chili flakes
  • Salt, pepper
  • 1 tsp dried herb mix (oregano, basilica, rosemary )
  • 1 tbsp olive oil
  • 1 tbsp sherry vinegar
  • 200 g whole-wheat pasta

Instructions:

  1. Preheat oven to 165C (fan mode)
  2. Cut all vegetables into rounds and place into a ovenproof bowl
  3. Add oil, vinegar, salt and pepper, and dried herbs
  4. Mix all together
  5. Spice pork chops with chili flakes, salt and pepper
  6. Add meat on top of the veggies
  7. Cook for about 1 hour or until vegetables and meat are ready
  8. Meanwhile, cook some whole-wheat pasta
  9. Serve everything with some green salad on the side
