Easy potato salad with bacon

Today I wanted to make a quick and easy salad from classic ingredients almost everyone has at home – well known potato salads!

Potato salad with bacon

Ingredients (serves 4-5 persons):

  • 6 medium potatoes
  • 10 slices of bacon
  • 1 large red onion
  • A pinch of dill
  • 2 tbsp Dijon mustard
  • 2 tbsp vegan mayonnaise ( you can use any mayo instead)
  • 4-6 tbsp Greek yoghurt or Sour cream (depends on how creamy you like it)
  • 1/2 lime (squeezed juice)
  • Salt and pepper to taste ( I didn’t add)

Instructions:

  1. Boil potatoes until tender (DON’T over cook!) and cool
  2. Preheat oven to 195C (fan mode) and cook bacon until crisp

  3. Chop onion and dill finely, and add to a large bowl

  4. Cut potatoes into pieces you prefer (I cut into medium cubes)
  5. Add to the bowl
  6. Mix mustard, mayo, Greek yogurt/sour cream and lime juice in a separate bowl until smooth
  7. Add to the salad bowl and mix all of the ingredients together properly
  8. Refrigerate for 1 hour
  9. Serve with some bacon on top and fresh baked ciabatta

    Serve with extra bacon and fresh ciabatta
