Cranberry Almond Cookies

You can make cookies whenever you want and it doesn’t take a lot of a time or thousands of ingredients. But the most important – they just TASTE fantastic! Especially, these cookies. Made out of almond flour, they are naturally gluten free  and also full of fiber and protein! Doesn’t it sound perfect? And you can always add different dried fruits, nuts and seeds – whatever your heart and… tummy wants!

Almond cookies with dried cranberries

 


Ingredients:

  • 200 g almond flour
  • 1tsp baking soda
  • 1/2 tsp salt
  • 40 g maple syrup/agave syrup
  • 40 g honey
  • 60 g butter, melted
  • 1 tsp vanilla powder
  • 100 g dried fruits, nuts, seeds of your choice ( I used dried cranberries)

Instructions:

  1. Preheat oven to 175C and line a baking pan with parchment paper
  2. In a medium bowl, add almond flour, baking soda and salt
  3. In a mixing bowl, whisk eggs and vanilla powder together
  4. Add melted butter, maple syrup/honey and mix until it’s smooth
  5. Stir dry ingredients and wet ingredients together until combined, adding cranberries (nuts, seeds or anything else after your preference)
  6. Refrigerate the dough for 15 minutes to 1/2 hour, so it’s not so sticky and easier to form cookies
  7. Using a large tablespoon, place dough onto the parchment paper and form cookies any form you want , leaving a 3-4 cm space between
  8. Add some extra dried fruit or nuts on top for more edgy look (optional)
  9. Bake for about 15-20 minutes or until golden brown
  10. Remove from oven and let cool down for 5 minutes 

     

    Serve with a glass of milk and raw honey
