Watercress Mousse

This perfectly light mousse is just made for any meal and it tastes delightful!

Watercress Mousse

  • 1 medium onion
  • 25 ml white wine (I used Pinot Grigio)
  • 2 handfuls of watercress
  • 200 g sour cream ( min. 18% fat)
  • Sea salt, pepper and lime juice (after taste)

  1. Warm a sauce pan on a medium heat
  2. Chop onion finely
  3. Sauté onions in the white wine and put a side to cool
  4. Coarse chop watercress
  5. Mix a half of the watercress with a little bit of sour cream (~ 50 g)
  6. Whip the rest of the sour cream with a mixer until it has firmed up
  7. Carefully blend those to mixtures together, adding onions, the other half of chopped watercress
  8. Add salt, pepper and lime juice to taste

Enjoy it!
