Pork & Cabbage Stir Fry 

Easy lunch idea for busy days – pork and cabbage stir fry served with wild rice.

Easy lunch idea 

Ingredients:

  • 300 g pork tenderloin, cut in cubes
  • 100 g cocktail sausages
  • 400 g cabbage, chopped roughly
  • 1 medium onion, chopped finely
  • 1 red bell pepper , cut in medium pieces
  • 2 tbsp olive oil
  • 1 tsp curry powder
  • Salt, pepper to taste

Instructions:

  1. Preheat a sauce/wok pan on a high heat
  2. Add 1 tbsp olive oil, chopped onion and bell pepper , and fry for 2-3 minutes
  3. Add pork and cook until it gets slightly brown, turn heat to medium
  4. Stir in chopped cabbage and cocktail/ mini sausages, curry powder and salt to taste
  5. Put the lid on and cook for 15 – 20 minutes

  6. Meanwhile cook some wild rice and make fresh/crunchy salad* to serve with

*I had some excess cabbage and red bell pepper, I blended with 1 tbsp olive oil and 1 tsp fresh squeezed lime juice (salt, pepper to taste)
