Mung Bean&Sweet Potato Casserole 

Here’s a quick recipe for everyone who loves casseroles. It takes only 15 minutes active preparation and 4 hours cooking time. Easy Peasy, friends!

Slow Cooker Casserole

Ingredients: 

  • 500 g ground pork/beef/chicken (I used pork this time)
  • 2 medium sweet potatoes
  • 2 medium potatoes
  • 1 large onion, chopped finely
  • 200 g mung beans, uncooked
  • 1 can (~450 g) crashed cherry tomatoes
  • 1 tbsp oregano, dried
  • 1 tbsp basilica, dried
  • 1 tsp cayenne pepper
  • 1 tbsp olive oil
  • 150 ml water
  • Salt, pepper to taste

Instructions:

  1. Heat 1 tbsp olive oil in a sauce pan
  2. Add chopped onion and fry for 1 minute until slightly golden
  3. Add ground meat and cook until meat turns brown
  4. Meanwhile, chop potatoes and sweet potatoes in small cubes
  5. Place potatoes, all dry ingredients (including uncooked mung beans) and water to a slow cooker
  6. Add cooked meat with onions
  7. Stir well, cover, and cook on low for 4 hours

    Cook for 4 hours on low program 

  8. Serve with some fresh veggies and pickled red beets
