Fluffy Ricotta Pancakes 

These deliciously gorgeous, in mouth melting pancakes are just EVERYTHING! Stumbled upon on this recipe while I was checking what’s new in The Kitchn. And I’m so happy to share it with all of you out there!

Ingredients ( makes 8-12 pancakes)

  • 250 g ricotta cheese
  • 120 g all-purpose flour
  • 1/2 tsp baking powder
  • 1 1/2 tbsp granulated sugar
  • 1/4 tsp fine salt
  • 180 ml milk (not nonfat)
  • 2 large eggs, separated
  • 1/2 tsp vanilla extract
  • Butter, for cooking

Instructions:

  1. Whisk together all dry ingredients (flour, baking powder, sugar and salt) in a small bowl
  2. In a large mixing bowl, combine ricotta, milk, egg yolks and vanilla
  3. Add the dry ingredients to ricotta mixture and stir until just combined
  4. In a electric mixer, beat the egg whites and fold in gently into the pancake batter
  5. Heat a pan over medium heat and pour batter onto ( ~ 80 ml)
  6. Cook the pancakes for about 2-3 minutes from both sides, until golden

 

Serve with maple syrup and fresh berries
