Green pesto marinated turkey with wok veggies 

It’s spring here in Denmark, so I wanted to make something light for the lunch. And what can be lighter than lean meat and veggies! So here we go…

Ingredients (serve for 4-5 persons):

  • 400 turkey fillet, cut in strips
  • 50 g green pesto ( I used fresh made from Deli Shop)
  • 150 g mini spring onions
  • 100 g green asparagus
  • 150 g broccoli
  • 1 medium chili
  • 2 tbsp olive oil
  • 1 tsp Spanish sherry vinegar
  • Salt, pepper after taste
  • 200 g whole grain conchiglioni (optional)

Instructions:

  1. Mix green pesto with turkey and let it marinate for 15-30 min
  2. Meanwhile, chop spring onions, chili, asparagus in large pieces and cut broccoli florets ( I prefer large)
  3. Preheat a wok pan on a high heat and add 1 tbsp olive oil
  4. Add chili, spring onions and asparagus, and cook (swishing around now and than) for 10 min

  5. Add broccoli florets, salt and sherry vinegar. Stir all ingredients together

  6. Turn down the heat to medium/low and continue to sauté for 10 more minutes
  7. Preheat a pan on a high heat and add 1 tbsp olive oil
  8. Add marinated turkey and cook until slightly browned ( ~ 6-7 min)
  9. Mix cooked turkey with the veggie wok, put the lid on and continue to cook all together until turkey is soft ( it takes around 10 minutes)

Serve with wild rice, fresh pasta or anything else, that’s on your preference list ( I made conchiglioni)
