Homemade Vegetable Noodle Soup 

The easiest and fastest soup ever from only 3 ingredients. Doesn’t it sound perfect?


  • 2,5 l water
  • 500 g frozen vegetable mix
  • 100 g rice noodles
  • Dried oregano, basilica (optional)
  • Salt, pepper to taste


  1.  In a medium soup pot, boil water and add frozen vegetables
  2. Cook for approx. 10- 15 minutes or until vegetables are al dente and tender
  3. Add dry spices and salt, pepper to taste
  4. Add rice noodles and cook for 4 minutes

Serve with toasted bread and add a tablespoon of Greek yogurt for more creaminess
