This delightful Avocado Egg Salad is completely mayo-free and tastes just amazing! Perfect as a sandwich spread or just as a light and healthy snack.
I would never imagine salad without mayo or some creamy dressing, but than I found this amazing recipe on http://www.thekitchn.com ( they have some really inspirational recipes!) and gave it a try. Believe it or not – Avocado just makes magic! You will never want to use mayo again.
Ingredients (serves 10 portions):
- 10 hard boiled eggs, peeled and diced
- 3 large, ripe Avocado
- 1 medium onion, diced small
- 1 lime (juice)
- Salt, pepper to taste
- In a large salad bowl, cut avocado into small chunks. Add lime juice, diced onion, salt and pepper and mix
- Add diced eggs and fold together until creamy (for extra creaminess you can add 1 tbsp fat free Greek yogurt)
