
Jus wanted to share this easy breakfast recipe for the whole family!
Ingredients (serves 6 Muffins):
- 3 medium eggs
- 150 ml milk
- 1/2 fine chopped sweet pepper
- 6 slices of bacon
- Finely chopped spring onions for decoration
- 1/2 tsp salt and pepper or to taste
- Olive oil for muffin forms
Instructions:
- Preheat oven to 180C
- In a medium bowl, crack 3 eggs, add milk and salt/pepper. Mix all together
- Spray muffin forms with olive oil
- In the bottom of every muffin form, add a little bit of chopped sweet pepper and crashed bacon (1 slice per form)
- Pour scrambled egg mixture in every form, approximately 50 ml
- Bake for 10-12 minutes
- Serve with some toast, more bacon or just fresh veggies
Enjoy it!
When I was working in an office, I’d make a batch of these on the weekend and reheat them in the microwave for a fast breakfast.

Don’t reheat them on high power. They get rubbery. Use medium or 50%.
