Breakfast Muffins

Delicious Scrambled Egg Muffins

Jus wanted to share this easy breakfast recipe for the whole family!

Ingredients (serves 6 Muffins):

  • 3 medium eggs
  • 150 ml milk
  • 1/2 fine chopped sweet pepper
  • 6 slices of bacon
  • Finely chopped spring onions for decoration
  • 1/2 tsp salt and pepper or to taste
  • Olive oil for muffin forms

Instructions:

  1. Preheat oven to 180C
  2. In a medium bowl, crack 3 eggs, add milk and salt/pepper. Mix all together
  3. Spray muffin forms with olive oil
  4. In the bottom of every muffin form, add a little bit of chopped sweet pepper and crashed bacon (1 slice per form)
  5. Pour scrambled egg mixture in every form, approximately 50 ml
  6. Bake for 10-12 minutes
  7. Serve with some toast, more bacon or just fresh veggies

  1. When I was working in an office, I’d make a batch of these on the weekend and reheat them in the microwave for a fast breakfast.

      1. Don’t reheat them on high power. They get rubbery. Use medium or 50%.
