Mango-Strawberry Strudel

Hello my darlings…

It’s been quite a while I have posted something here. But I’m back today to share with you this absolutely delicious and ridiculously easy strudel recipe. Let’s say it is my apology for being away for so long time 🙂

  • 1 sheet of gluten free puff pastry (I used Schär)
  • 1 large ripe mango, cut in small cubes
  • 10 medium strawberries, cut in quarters
  • 2 tbsp brown sugar
  • 1 egg for egg wash

  1. Preheat oven to 200 C
  2. Line a baking sheet with parchment
  3. Transfer dough to the baking sheet and make angled cuts approximately 2 cm in width from the edger, cutting about a third of the way to center on both sides of the dough
  4. Cut the mango into small cubes (tips for mango cutting)
  5. Cut strawberries into quarters
  6. Add cut fruits to a medium bowl, add the brown sugar and toss to coat
  7. Arrange the mango and strawberries down the center of the dough
  8. Starting on one side, bring one of the cut strips to the center and repeat with the following side
  9. Continue with “braiding” the dough to the end, covering the mango and strawberries
  10. Brush with egg wash
  11. Bake for approx. 20 – 30 minutes or until the crust is brown
  12. Add some melted chocolate or sprinkle with sugar. I personally added dried cranberry powder on top for extra color

…..and that’s it! A perfect and easy Mango-Strawberry Strudel recipe. Add a scoop of vanilla ice cream for a perfect dessert.
